You'll possibly not have heard of all/most of these, but my favorite movies are, of course, from Eastern Asia. In no particular order, I can only recommend:
Once Upon a Time in China - just the first one; the others are good too, but the first one is good on so many levels - action, angst, political commentary... it covers its bases.
Saviour of the Soul - the incomparable Andy Lau in a movie that's extreme in so many ways, it seems impossible; a character can't make the smallest statement without being completely melodramatic - love it, worship it!
Versus - the best zombie-yakuza-samurai-reincarnation-karate-gunplay-comedy flick ever made!
Drunken Master II (known by a myriad other titles) - Jackie Chan's best movie. Get it in the uncut version, or it'll suck. 'nuff said
Crouching Tiger, Hidden Dragon - one of the first grand Chinese movies to make it wholly to the west. Michelle Yeoh and Chow Yun Fat were simply amazing in this one. The few scenes they have together are so intense, I still shiver when I see them. Zhang Ziyi wasn't too shabby either, but I'm not really her greatest fan.
The Killer - because a John Woo/Chow Yun Fat bullet ballet had to be on this list.
...and a few non-Asian movies:
Memento - possibly my favorite thriller of them all. The backwards story telling was a fantastic gimmick.
The Thing - or John Carpenter and Kurt Russell creates a nihilistic masterpiece. There aren't enough good words in the dictionary for this one.
The Good, The Bad, and The Ugly - Sergio Leone, Enio Morricone, Clint Eastwood, Lee Van Cleef... a cocktail that goes down really, really well. Especially so in this master piece that I consider far more ultimate than Once Upon a Time in the West, which was supposed to be the ultimate one.
There's a vast number of horror/slasher flicks I also adore, but I'll spare you for now.
